Ingredients
- 613g russet potatoes, diced
- 3 tbsp unsalted butter
- 2 tbsp sour cream
- 1 tsp ponzu sauce
- 1 tsp sea salt, fine grain
- ½ tsp ground pepper
- 60mL Whole Milk
- 2 tsp resting juices from protein (optional, if available)
Instructions

Step 1: Gather all of the ingredients.

Step 2: Peel, dice, and weigh potatoes in a medium saucepan then cover with 1” of water.

Step 3: Set on high heat until reaching a rolling boil (there should be a lot of agitation! About 10 mins). Reduce to medium heat and cook 15 mins.
Drain potatoes and return the medium saucepan to medium heat. Add the butter and cook until melted, about 2-3 mins.

Step 4: Add potatoes to the medium saucepan.

Step 5: Mash the potatoes with a potato masher until smooth.

Step 5: Cook potatoes for an additional 2 mins, while stirring frequently.

Step 6: Add sour cream, ponzu, sea salt, pepper, and milk. Stir to combine.
