Fig, Brie, Pear, and Caramelized Onion Grilled Cheese

Ingredients
- 113g brie cheese
- gouda, shredded, to taste
- fig jam, to taste
- 140g yellow onion, sliced
- 46g shallot, sliced
- 1 D’Anjou pear, thinly sliced
- 150mL Pinot Grigio
- 1/2 tsp ponzu sauce
- sea salt, fine grain, to taste
- ground pepper, to taste
- Sir Kensington’s Classic Vegan Mayo, works great for browning the crust!
- 1/2 tbsp granulated sugar
- 3 tbsp unsalted butter or vegan ghee, divided
Instructions
Disclaimer: I am now using a high precision scale (accurate up to 0.1g). In some pics you may notice I am rounding the weight. My husband, the chemist, says this is OK 😂 take it up with him!
Prepare the caramelized onions

Step 1: Gather all of the ingredients for the caramelized onions.

Step 2: Peel and slice the onion, set aside.

Step 3: Peel and slice the shallots, set aside.

Step 4: Heat an 8″ fry pan over medium heat with 2 tbsp butter or vegan ghee, onions, and shallots for 4 mins. Toss to combine.

Step 5: Cook, stirring occasionally for about 10 mins. When the onions and shallots start to brown, turn the heat down to medium low heat. Continue cooking for 10 mins while stirring frequently.

Step 6: Reduce to low heat and cook for 10 mins while stirring occasionally. (total time ~30 mins)

Step 7: When the time is up, add the wine and turn up the heat to medium. Bring to a simmer and cook until mostly evaporated, about 5 mins.
Add the sugar and cook for 2 mins, stirring frequently. Take off heat. Toss onions with ponzu sauce, and move to a plate. Set aside.
Prepare the sandwich

Step 1: Freeze the Brie for 30 mins to make it easier to slice.

Step 2: Cut off the rind.

Step 3: Slice the brie and set aside.

Step 4: Spread the mayonnaise on one side of all 4 bread slices.

Step 5: Season with sea salt and pepper to taste.

Step 6: Thinly slice the pear and divide evenly among the plates.

Step 7: Flip one slice over for each sandwich and spread fig jam to taste (this will be on the inside of the sandwich).

Step 8: Sprinkle shredded gouda, to taste.

Step 9: Lay down the brie evenly.

Step 10: Top with pear slices.

Step 11: Top with caramelized onions.

Step 12: Heat the 8″ fry pan with butter or vegan ghee over medium heat for 4 mins.
Slightly reduce heat and lay sandwich in pan. Cook for 2 mins.

Step 13: Flip the sandwich and cook for an additional 2 mins. Let rest 3 mins.

I like to cut my grilled cheese into sticks.
