Disclaimer: I am now using a high precision scale (accurate up to 0.1g). In some pics you may notice I am rounding the weight. My husband, the chemist, says this is OK 😂 take it up with him!

Step 1: Preheat the oven to 425°F.

Step 2: Gather all of the ingredients.

Step 3: In a small cup combine chili powder, sea salt, ground pepper, Hungarian paprika, and parsley. Stir to combine and set aside.

Step 4: Use the largest holes on a box grater for all grated vegetables.

Step 5: Grate, and weigh the potato.

Step 6: Grate and weigh the zucchini.

Step 7: Thinly slice the red bell pepper into 1″ sticks and weigh.

Step 8: Peel, grate, and weigh the onion.

Step 9: Using a clean dish cloth, squeeze out any excess liquid from the grated vegetables. Add to a large bowl.

Step 10: Press the garlic.

Step 11: Weigh the garlic.

Step 12: Use clean hands to mix and combine the vegetables.

Step 13: Beat the egg in a separate bowl.

Step 14: Weigh the flour.

Step 15: Weigh the bread crumbs and set aside.

Step 16: Add beaten egg and 1 tbsp melted Ghee to the bowl.

Step 17: Stir to combine.

Step 18: Add flour, bread crumbs, and seasoning cup to the bowl.

Step 19: Stir to combine.

Step 20: Add the sunflower oil to a 9″ x 13″ pyrex dish.

Step 21: Make 8 Latkes from the vegetable mixture and add them to the baking dish, flattening slightly.

Bake for 12-15 mins in the preheated oven.

Step 22: Remove from the oven, flip, then bake an additional 12-15 mins, until the edges are browned and crispy.

Step 23: Remove from the oven.

Step 24: Let rest for 5 mins on a paper towel lined plate.
