Baked Crunchy Chicken Drumsticks

Ingredients

  • 10 chicken drumsticks
  • 149g (~1 ¼ cups) all-purpose flour
  • 2 Large grade A eggs
  • 2 tbsp water
  • 1 tbsp smoked paprika, divided
  • 1 tbsp garlic powder, divided
  • 1 tbsp poultry seasoning, divided
  • 1 tbsp baking powder 
  • 220g (~2 cups) panko breadcrumbs
  • kosher salt, to taste
  • ground pepper, to taste

Instructions

Step 1: Season chicken drumsticks with kosher salt and ground pepper, to taste. Let rest at room temperature for 1 hr.

Step 2: While the chicken rests, gather all of the ingredients.

 

Step 3: Line a large baking sheet with foil, then set a rack on top. Spray the rack generously with cooking spray.

 

Step 4: Add the flour to a gallon storage bag.

 

Step 5: Add the baking powder to the flour then add 1 ½ tsp each of smoked paprika, garlic powder, and poultry seasoning.

 

Step 6: Shake to combine and set aside.

 

Step 7: Add the panko to a gallon storage bag.

 

Step 8: Add 1 ½ tsp each of smoked paprika, garlic powder, and poultry seasoning.

 

Step 9: Shake to combine and set aside.

In a small bowl whisk eggs and water. Set aside.

 

Step 10: When the chicken is done resting, pat dry and preheat the oven to 375°F/190°C.

Working with one drumstick at a time, dredge in flour and shake off the excess.

 

Step 11: Dip the drumstick into the egg and turn it over to completely coat.

 

Step 12: Finally dredge the drumstick in panko, shake off excess, then coat with a generous spray of cooking spray before setting on the prepared rack.

 

Step 13: Repeat the process for the remaining drumsticks.

 

Step 14: Bake for 45 mins in the preheated oven, then let rest 10 mins.
