Cheesy Chicken & Broccoli Casserole

Ingredients

For the meat

  • ~680g (~1 lb. 8 oz.) boneless, skinless chicken breasts, diced
  • sunflower oil, for drizzling
  • 1 tsp salt
  •  ½ tsp ground black pepper 

For the casserole

  • 333g (~3 ⅔ cups) broccoli florets, chopped
  • 108g (~ ¾ cup) white onion, diced 
  • 298g (~1 ¼ cups) Campbell’s Cream of Chicken
  • 298g (~1 ¼ cups) Campbell’s Cream of Broccoli
  • 1 pkg. (340g) Stuffing mix, prepared
  • 81g (~⅓ cup) sour cream
  • 150mL (~⅔ cup) heavy cream
  • 100mL (~½ cup) water 
  • 1 tbsp Worcestershire 
  • 1 tsp adobo seasoning
  • ½ tsp celery salt 
  • 1 Large grade A egg yolk 
  • medium cheddar, freshly shredded, to taste

Instructions

Step 1: Season the chicken with salt and ground pepper, then let rest at room temperature for 1 hr.

Step 2: When the chicken is done resting, gather all of the remaining ingredients.

Step 3: Chop the broccoli.

Step 4: Peel and dice the onions.

Step 5: Add the cream of chicken, cream of broccoli, Worcestershire, adobo seasoning, celery salt, and egg yolk.

Step 6: Add the sour cream.

Step 7: Stir to combine and set aside.

Step 8: Preheat the oven to 400°F/200°C then heat a drizzle of sunflower oil in a large skillet over medium heat for 5 mins.

Add the chicken.

Step 9: Cook the chicken, flipping every 2 mins, until browned. About 10 mins.

Step 10: Remove the chicken to the bowl with the broccoli mixture and leave the skillet on the heat with the fond.

Step 11: Add the water.

Step 12: Bring to a simmer, scraping and stirring to release the fond from the bottom of the pan.

Step 13: Add the skillet liquid to the chicken and broccoli mixture.

Step 14: Stir to combine and set aside.

Step 15: Prepare the stuffing according to package directions and add to a lightly greased 9″ x 13″ baking dish.

Step 16: Using a spatula, press the stuffing down.

Step 18: Cook in the preheated oven until browned on the edges. About 25 mins, set aside (leave the oven on for the next steps).

Step 19: Grate the amount of medium cheddar you would like to top the casserole with. I used 125g (~1 cup) of freshly shredded cheese.

Step 20: Spread the chicken and broccoli mixture on top of the stuffing in the baking dish.

Step 21: Top with the cheese.

Step 22: Bake in the preheated oven until browned and bubbly, about 30 mins.
