Smoky & Tangy Turkey Fajitas (Low-Fat)

Ingredients

For the turkey

  • 685g (~1 lb. 8 oz.) turkey tenderloins, sliced into thin strips
  • 75mL (~⅓ cup) apple cider vinegar
  • 1 tsp kosher salt
  • ½ tsp ground black pepper 

For the fajitas

  • 1 sweet onion, sliced
  • 1 red bell pepper, sliced into strips
  • 1 yellow bell pepper, sliced into strips
  • 1 orange bell pepper, sliced into strips
  • 150mL (~⅔ cup) apple cider vinegar
  • 1 lime, juiced

For the fajita seasoning

  • 1 ½ tsp garlic powder 
  • 1 ½ tsp smoked paprika 
  • 1 tsp oregano
  • 1 tsp ground cumin 
  • ½ tsp turmeric 
  • ½ tsp ground ginger 

For serving

  • 8 zero-carb flour tortillas, warmed
  • low-fat cheese, to taste
  • low-fat sour cream, to taste 
  • fresh parsley, chopped, to taste

Instructions

Step 1: Gather all of the ingredients for the turkey then pat dry the meat. Slice into thin strips and toss in a medium bowl with the kosher salt and ground pepper. Refrigerate, covered, for 1 hr.

Step 2: When the turkey is done resting, set on the counter and grab all of the ingredients for the fajita seasoning.

Step 3: In a small cup, add the ground cumin, garlic powder, smoked paprika, oregano, ground cumin, turmeric, and ground ginger. Stir to combine.

Step 4: Add 1 tbsp of the fajita seasoning to the turkey (reserving the rest for a later step) .

Step 5: Massage thoroughly to coat then refrigerate for 1 hr.

Step 6: While the turkey rests, gather all of the ingredients for the fajitas.

Step 7: Halve, peel, and slice the onion. Separate the layers and add to a large bowl.

Step 8: Slice the red bell pepper into strips.

Step 9: Slice the yellow bell pepper into strips.

Step 10: Slice the orange bell pepper into strips.

Step 11: Toss to combine and set aside.

Step 12: Juice the lime and set aside.

Step 13: When the turkey is done resting, wrap tortillas in foil, place in the oven, and preheat the oven to 200°F/90°C.

Leave the wrapped tortillas in the oven until serving time.

Step 14: Heat a cast iron skillet over medium heat for 4 mins.

Step 15: Add the turkey strips to the skillet and sear, undisturbed, for 3 mins.

Step 16: Stir and break up the meat.

Step 17: Add 75mL (~⅓ cup) apple cider vinegar to the skillet.

Step 18: Bring to a simmer.

Step 19: Cook, stirring occasionally, until the vinegar is reduced. About 12 mins.

Step 20: Continue cooking the turkey, stirring every 3 mins, until browned. About 9 mins.

Step 21: Set the turkey strips aside on a paper towel lined plate.

Step 22: Add the onions and bell peppers to the skillet.

Step 23: Add 150mL (~⅔ cup) apple cider vinegar.

Step 24: Cook, stirring occasionally, until vinegar is evaporated. About 10 mins.

Step 25: Continue cooking, stirring every 2 mins, until browned. About 6 mins.

Step 26: Add the onions, peppers, and turkey to a large bowl. Toss to combine.

Step 27: Add the remaining fajita seasoning.

Step 28: Add the lime juice.

Step 29: Toss to combine and let rest for 5 mins.

For serving: Top with low-fat sour cream, low-fat cheese, and chopped parsley, to taste.
