Smoky Honey Mustard Apple Slaw

Ingredients

For the honey mustard dressing

  • 125g (~½ cup) mayonnaise
  • 3 tbsp Dijon mustard
  • 3 tbsp honey
  • 1 tbsp white wine vinegar
  • 1 tsp celery seed
  • ½ tsp turmeric 
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp ground ginger
  • ½ tsp ground black pepper
  • ⅛ tsp fish sauce

For the apple slaw

  • 397g (~4 ½ cups) classic coleslaw mix (cabbage and carrots)
  • 220g (~1 ½ cups) Granny Smith apple, diced
  • 25g (~2 stalks) scallions, thinly sliced
  • 67g (~½ cup) sunflower & pumpkin seed mix, salted and roasted

 

Instructions

Step 1: Gather all of the ingredients for the dressing.

Step 2: In a medium sized bowl combine mayonnaise, dijon mustard, honey, white wine vinegar, celery seed, turmeric, smoked paprika, garlic powder, ground ginger, ground pepper, and fish sauce.

Step 3: Whisk thoroughly to combine and set aside.

Step 4: Gather all of the ingredients for the apple slaw.

Step 5: Toss the coleslaw mix with the dressing.

Step 6: Finely slice the scallions (whites and greens) then add to the bowl.

Step 7: Add the nuts to the bowl.

Step 8: Dice the apple and add to the bowl.

Step 9: Toss all of the ingredients thoroughly to combine then cover and refrigerate a minimum of 2 hrs. For the best flavor, chill overnight.

Toss to combine before serving.
