Smoky Honey Mustard Apple Slaw

Ingredients
For the honey mustard dressing
- 125g (~½ cup) mayonnaise
- 3 tbsp Dijon mustard
- 3 tbsp honey
- 1 tbsp white wine vinegar
- 1 tsp celery seed
- ½ tsp turmeric
- ½ tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp ground ginger
- ½ tsp ground black pepper
- ⅛ tsp fish sauce
For the apple slaw
- 397g (~4 ½ cups) classic coleslaw mix (cabbage and carrots)
- 220g (~1 ½ cups) Granny Smith apple, diced
- 25g (~2 stalks) scallions, thinly sliced
- 67g (~½ cup) sunflower & pumpkin seed mix, salted and roasted
Instructions

Step 1: Gather all of the ingredients for the dressing.

Step 2: In a medium sized bowl combine mayonnaise, dijon mustard, honey, white wine vinegar, celery seed, turmeric, smoked paprika, garlic powder, ground ginger, ground pepper, and fish sauce.

Step 3: Whisk thoroughly to combine and set aside.

Step 4: Gather all of the ingredients for the apple slaw.

Step 5: Toss the coleslaw mix with the dressing.

Step 6: Finely slice the scallions (whites and greens) then add to the bowl.

Step 7: Add the nuts to the bowl.

Step 8: Dice the apple and add to the bowl.

Step 9: Toss all of the ingredients thoroughly to combine then cover and refrigerate a minimum of 2 hrs. For the best flavor, chill overnight.
Toss to combine before serving.
