Hi friends. I’ve had a rough couple of months (since November 2024) dealing with Hyperkinetic biliary dyskinesia (overactive gallbladder), and Enterogastric reflux (bile flowing backwards into my stomach/esophogus). I’ve lost a lot of weight among other not so pleasant things, pretty much anything with fat makes me incredibly ill. It’s been a REAL struggle switching to a low-fat diet. I start to become ravenous for the things I should not be eating. I’m in the process of getting medical treatment for it but the American health care system can be a bit slow. I’m on the last hurdle though! Just waiting for the GI specialist office to call me for scheduling. The end is nigh.
Anywho, I just wanted to share a small personal update but also give more insight as to why I have been starting to post more low-fat recipes on my site. It’s not much at the moment, but I hope to increase the number of low-fat recipes in the near future.
This week I am making a turkey kofta without onion and garlic (low FODMAP). I did research on some Indian spices so I don’t sacrifice flavor by eliminating two of my favorite things, I am excited to see how it pans out!
