Breaded Tajín-Honey Tilapia

Ingredients
For the tilapia and Tajín rub
- 4 (3.5 oz) tilapia fillets
- 1 tbsp Tajín seasoning
- ½ tsp onion powder
- ½ tsp smoked paprika
- ½ tsp ground black pepper
For the citrus-honey glaze
- 2 tbsp honey
- 1 ½ tsp lime juice
- 1 tsp sunflower oil
- ½ tsp Worcestershire sauce
For the browned garlic butter panko
- 1 ½ cups panko breadcrumbs
- 3 tbsp unsalted butter
- 1 tbsp sunflower oil
- 2 large cloves of garlic, finely chopped
- ½ tsp salt
- ¼ tsp ground black pepper
Instructions

Step 1: Preheat the oven to 425°F/220°C and gather all of the ingredients (salt and honey not pictured).*
*NOTE: I am preparing three fillets but the recipe is for four.

Step 2: Place a wire rack over a rimmed baking sheet and lightly oil the rack.

Step 3: Pat the tilapia fillets dry with paper towels.

Step 4: In a small cup, mix the Tajín, onion powder, smoked paprika, and ground black pepper.

Step 5: Rub the seasoning mixture evenly over both sides of the tilapia fillets.

Step 6: In a small microwave-safe cup, add the honey, lime juice, sunflower oil, and Worcestershire.

Step 7: Whisk to combine and set aside.

Step 8: Peel and finely chop the garlic then add to a small skillet along with the butter.

Step 9: Sauté garlic in butter over MEDIUM heat, stirring, until garlic is golden and butter browns. Watch carefully to avoid burning.

Step 10: Take off the heat and quickly transfer to a ramekin. Let rest for 10 mins.

Step 11: In a separate bowl, combine the panko breadcrumbs, browned garlic butter (after resting), salt, ground black pepper, and sunflower oil.

Step 12: Mix thoroughly until the crumbs are evenly coated.

Step 13: Microwave the citrus-honey glaze for 20 secs on HIGH in 10 sec increments.
Gently brush both sides of the fillet with the citrus-honey glaze.

Step 14: Press the panko mixture firmly onto both sides of the fillet to help it adhere. Place the coated fillet on the prepared wire rack.

Step 15: Repeat the process for the remaining fillets.

Step 16: Bake for 9 mins in the preheated oven, then flip the fillets.

Step 17: Bake for another 9 mins, until the coating is golden brown and the fish is opaque and flakes easily with a fork.
Remove from the oven and let rest for 5 mins.
