Honey Strawberry Panna Cotta

Step 1: Put gelatin in a cup with 2 tbsp water, stir with a fork to combine and set aside to bloom 5-10 mins.

Step 2: Whisk milk, honey and ⅛ tsp sea salt in saucepan over medium heat. Do NOT boil! Remove from heat when milk begins to steam, about 7-8 minutes.

Add vanilla extract, 2 drops of strawberry oil, and gelatin. Whisk continuously to emulsify the oil and dissolve the gelatin, about 2 minutes (it will be foamy).

Add heavy cream and lime juice concentrate, whisk to combine. 

Step 3: Pour through fine mesh sieve to collect any undissolved chunks.

Step 4: Pour into ramekins/molds* and let sit on counter 10 minutes. Poke panna cotta mixture with the bottom of a wooden spoon periodically to distribute bubbles.

Cover and put in fridge, chill 4 hours

*These molds work amazing for releasing the panna cotta!!
